Nadia's Chewy Chocolate Chip Cookies

Ingredients
  • 1 cup (225g) unsalted butter
  • 3 1/4 cup (400g) all-purpose flour
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 12 oz (340g) chocolate, chips or chopped
  • 1 cup (200g) brown sugar
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • sea salt flakes, for sprinkling
Directions
  1. Melt butter in saucepan large enough for sugars and eggs. Let cool.
  2. In separate bowl (mixer bowl), mix flour, baking powder, baking soda, and salt until well combined.
  3. With the butter, mix brown sugar, granulated sugar, eggs, egg yolks, vanilla extract, and almond extract.
  4. Make well in center of dry ingredients and pour in the liquid ingredients. Mix.
  5. Stir in chocolate.
  6. Chill in fridge for 30 min.
  7. Form 2 oz / 60g balls and chill for at least 4 hrs (overnight preferred). Either put on lined baking sheet or in container separated by parchment paper.
  8. When ready to bake, preheat oven to 350°F. Place balls on baking sheet with room to spread. Sprinkle sea salt on top.
  9. Bake 14-16 min or until just lightly golden around edges and paler in center. May look underdone, but that's ideal!
  10. Cool on baking sheet 10 min before transferring to cooling rack.
Additional Notes

If cooking from frozen, slightly lower oven temp and bake slightly longer.
